Kodiak Blueberry Protein Coffee Cake

A simple summer coffee cake loaded with fresh, juicy blueberries, the nutty flavor of whole grains and BONUS… packed with extra protein.

So one of my new favorite finds in the past year has been Kodiak Cakes Flapjack and Waffle Mix. Not only do I use it exclusively for all of the pancakes and waffles that I make in on our house now, but I’m loving experimenting around with other things that can be made with the mix. As a personal traininer and nutritional coach I preach whole grains and boosting protein on a daily basis. So many bread products are made with enriched white flour and have little or no protein. So I’m all in on this product!

A few weekends ago I had some luscious blueberries calling my name. I went hunting for a Kodiak coffee cake on their site, which I found, but it was a fancy bundt coffee loaded with more calories than I was looking for. So using that recipe, as well as one of my own simpler basic coffee cake recipes, I came up with the following recipe. And let me just say it is delicious! Greek yogurt adds great texture and additional protein to this simple recipe. The oatmeal streusel is a perfect topper. This definitely got the thumbs up at my house.

I suggest storing your leftovers in the fridge, as this is very moist and could mold quickly.
